Cooking started at an early age for Thomas when he began testing recipes from his family’s library. His passion for cooking grew in his pursuit to bring satisfaction and joy to people through his food, and that continues to this very day.

Throughout his career he has worked for a James Beard Award winning Chef Michael Schwartz at multiple concepts in Miami, Grand Cayman and Nassau. Under Chef Michael Schwartz he learned to incorporate local products and be an advocate for farmers and fishermen. He has taken this a step further during his time in Grand Cayman as a member of the Cayman United Lionfish League (CULL) where he educated the public and was one of the first restaurants to serve this invasive, tasty fish on his menus.

He worked as the Head Chef of The Brasserie, a leading farm-to-table restaurant in Grand Cayman with Chef Dean Max before branching out to start his own company, Tomfoodery Kitchen.

In 2023 he has embarked on a new chapter of his career where his company Chef On Call will provide private chef services, event catering and restaurant consulting to residents and visitors across Grand Cayman. His other projects include his new hot sauce brand Cayman Peppa Sauce and a locally made gifting service called Cayman Pantry.
